For Making Yoghurt
Measure 1200 ml (6 cups) of fresh, pasteurised milk.
Add 200 ml (1 cup) pure yoghurt to the milk. (If you prefer yeast, adjust the ratio of lactobacteria yeast to fresh milk to 1/500). Mix well to obtain a homogeneous mixture of fresh milk and pure yoghurt (or yeast).
Divide the mixture into 7 yoghurt glasses and put the lids on the yoghurt glasses. Place the yoghurt glasses in the yoghurt machine and close the machine lid.
